Oh, wow. I have left this blog alone for too long. I have been horribly sick, but that’s no excuse. I have still been cooking, and it really doesn’t take long to post.

Here’s what’s cooking this week:

Last night: Corned beef hash
Tonight: Chicken Enchiladas from Annie’s Eats
Tomorrow night: Reubens from the leftover corned beef
Wednesday: Cashew Chicken from Amber’s Delectable Delights
Thursday: Balsamic Chicken with Onions from $5 Dinner Mom
Friday: GIRL’S WEEKEND IN MASSACHUSETTS!!!! AHHHHH!!!!

Something is missing. The vegetables. I have been failing at using veggies. I have tons of carrots, onions, butternut squash, garlic and spinach. So we’ll be having roasted carrots for sure this week…and beyond that, I don’t know. I need to get back on track!
