I used Acini de Pepe because my silly grocery store was out of orzo, and it worked fine. I used only 4oz of goat cheese not only because I’m cheap, but also because the choices are either 4oz or 11oz and….well, yeah, that WAS the only reason–I’m cheap. I bet it would be even better with those other two ounces, though. I’ll put in the full amount next time.

This week’s food.

I’m not cooking much this week because of various meetings and other activities, but here’s what’s coming.

Sunday: Ate out–thanks, Mom and Dad!

Monday: Creamy Orzo with Chicken and Goat Cheese, From Confections of a Foodie Bride. This was excellent–stay tuned for pictures.

Tuesday: Popcorn Chicken. This was so so. As usual, if I had used the ingredients the recipe called for it might have turned out better. Instead, I use white flour and mixed in some panko. Panko, apparently, will not stick to damp chicken unless you use egg, so all the panko pretty much fell off. These nuggets were tasty, but they were WAY tastier after I drowned them in Frank’s Hot Wing Sauce. Served with a caesar salad.

Wednesday: Late meeting

Thursday: Moose marinated in Soy Vay, stir fried with broccoli and bok choy.

Friday: Another late meeting.

Life is never going to slow down, so I’m just going to have to make time for this little blog. I’m 19 weeks pregnant and in the middle of disassembling a guest room to make it a nursery, and disassembling a Man Room to make it into a guest room. Lots of taping, sanding, painting, etc. But, I still have to eat!

This week’s food:

Sunday: Chorizo/Potato/Mushroom Tacos. Except that I used chicken sausage. Next time I’ll use chorizo. From Married with Dinner.

Monday: Moose Burgers and Sweet Potato Fries with Bacon Vinaigrette. Awesome. From Confections of a Foodie Bride.

Tuesday: Lighter General Tso’s Chicken with Jasmine Rice. From Good Things Catered.

Wednesday: Garlic Lemon Chicken Kabobs–we put the chicken in a tortilla with cheese, spring mix, and yogurt with cucumbers. Another hit. From Annie’s Eats.

Thursday: Midwife appt at 5:30, so we’re having sandwiches.

Friday: I don’t know. It was supposed to be Popcorn Chicken, but I used up all the chicken earlier in the week.

Saturday: Ahhhh, the annual Library Sleepover. Miles will have to fend for himself!
